• Natural elements having anti cancer properties are:
- Carotene, Retinol, α-tocopherol, Selenium, Ascorbic acid.
• Nitrosoamines are carcinogenic especially for
stomach carcinoma. Dietary nitrates (in preserved, smoked, cured foods)
converted to nitrites. In presence of nitrites, dietary amines are converted to
N-nitroso compounds, which is carcinogenic.
